Take some lettuce washed and chopped add some cherry tomatoes and cubes of Feta cheese. Garnish with herbs, to taste. Drizzle over a mixture of olive oil and vinegar and serve in a salad bowl or side bowl with a traditional Greek dish such as Stafado or the like.

Personally I prefer ordinary tomatoes (probably because it's easier to find really ripe and tasty ones among those, at least in Sweden), and I strongly recommend using Feta cheese made from 
milk - I know there are several brands out there made from cow milk - not at all the same thing! *shudders*
I also like to add sliced red onion, and finely chopped (not pressed) garlic in the dressing...
...and olives, if you like them - either green or black ones...

Endless variation...
I would have sliced ordinary tomato, chopped cucumber, sliced red onion, black olives and good feta cheese. For a simple dressing just olive oil and lemon juice with a bit of black pepper. Mmmmmm...

Yes, that's the one! Can't be doing with lettuce in a Greek salad! I used to part-own a cafe in America where we did a Greek salad and the Americans did demand salad so I got used to it, but it seemed really odd. They also wanted only about four olives. Now, I ask you! Four olives? Sacrilige.
I've got a Greek Salad gently marinading in the kitchen at home right now.

Agreement...lettuce in Greek Salad.. 
Although if you want variation add finely chopped celery. And don't forget the oregano and mint!

Celery? Sorry, but I can't stand the taste of celery!
No lettuce in my Greek salad either - and I add a lot of olives - my favourites are green olives stuffed with anchovy...
