I would suggest that the film was not all filmed in the Highlands of Scotland, some of it was filmed in the Lowlands of Scotland. I believe the village pub can be found around Kirkcudbright in Dumfries and Galloway.

I can't remember where I read it, but I think it was in the Radio Times a few weeks back, before it was on the TV. And they went through all the locations and stuff.

It may have been my knowledge of Scottish geography that let me down, to be honest.
I'll check tonight in Allan Brown's excellent book, 'Inside the Wicker Man'.

Here we go;
The interiors were the Ellengowan Hotel, Creetown and a private house in Whithorn.
The exteriors were shot at Gatehouse of Fleet.
Whether or not these count as Highlands I'll leave for someone with a better knowledge of Scottish geography than I.
Kirkudbright was the location used to film the villagers rehearsal of their ceremony.

Yes, those are all in Dumfries and Galloway, on the Solway Coast, which would be the lowlands.
