I have five cabbage patch dolls, one is a koosas, one is two are infants,(one is bald the other has a little tuf of hair) one is a red head and one is suppose to have a pacifier, one the back of the head of three of them is a sort of raised number, what does this mean?

The raised number on the back of the head is the mold number for that head -- all the head with the same shape and facial features will have the same number. When you see cabbage patch kids advertised on eBay and whatnot, people will often mention the company (i.e., Coleco, Hasbro), the country it was manufactured in, the year of the signature on the rear, and the head mold number -- in addition to all of the obvious things like hair color and style, eye color, gender, clothes, etc.
