Hello chaps.
Splendid article. Risotto rice is one of the most interesting food substances around, after goo (no 1) and mints (no 2). Apparently the rice kernel is surrounded by this wierd soluble starch substance called Amylopectin, which makes all the creaminess of the risotto. And alledgedly carnaroli rice was invented in Japan in the 1940s using technology.
Remember; think twice before ordering risotto in a restaurant. If you don't it will be quite likely that Tufty will personally kick you out of the Tufty Club.
