Although this article is very well researched and written, there are - as everywhere - two more alternatives:
1) You can completely replace butter with olive oil (this may be a tip for the cholesterol-sensitive of us)
2) 'Vialone Nano' Rice does also qualify for risotti (although it is also widely used for minestrone)
