About 30 years ago I had to have a yellow fever jab in Ethiopia (as the previous one had "run out" .I don't think it would have made any medical difference if I hadn't done it then but I wasn't allowed to travel without it) and was extremely ill with some sort of blood poisoning.
Since then I have(a) had the necessary jabs in good time before leaving UK and (b) carried a set of sterilised needles.

Incidentally, I have eaten from roadside stalls all over Africa and bits of East Asia with no ill effect. If you see it come out of boiling water or boiling oil it should be safe enough (there may be some danger from burns, but some people manage to burn themselves with McDonalds' coffee smiley - smiley)
