Blue Onion Soup

A really great soup is the following, which I pilfered from the English cooking show "Two Fat Ladies" (God Bless You Jennifer, wherever you are...):
The amounts are kinda sketchy, as I usually just throw it together.
Several yellow onions, chopped
Some butter
Several cups of chicken stock (a bottle of beer with the stock--and in your belly--is optional)
10 ounces blue cheese--Stilton is really good
Salt and pepper
Saute the onions over medium-high heat on top of the stove in a dutch oven or soup pot with the butter until golden brown. The darker the onions, the darker the soup. Pour in the chicken stock and beer and simmer over low heat for 40 minutes. Add salt and pepper to taste. Crumble in the cheese and simmer for another 15 minutes
(I always manage to use more blue cheese than the amount I listed above). Bon appetit!
This is best with good French bread or homemade croutons. Mmmm, mmmm
