Made a version of this cake (slightly bigger) last weekend as a Birthday cake - iced it over and everything - went down a treat!!
Slight variation is to add a little Brandy to the Butter Cream - this makes it more manageable and easier to spread - also adds a nice flavour.....

Dust the top of the cake with caster sugar, icng sugar or even better try this one:
Make yourself a sponge cake [for extra festive charm you might want to add 1 orange rind and a tbsp of orange juice with the eggs when you make it].
Bake your cake.
Instead of jam and icing, spread some honey on the bottom cake [this is hard, and takes quite a bit of honey, but it soaks in and goes yummy]. Put the top cake on and dust the top with 2 tbsps of caster sugar mixed with 1tsp cinnamon. Sooooooooooooooooooooooooo fab!
