TexMex - Charra Beans

Here in Houston, there is a Mexican restaurant in virtually every neighborhood, and I've been to most of them. Standard side dishes are "rice and beans", but that usually involves refried beans which can taste like bean paste. I much prefer "charra beans" or in Spanish "Frijoles a la Charra", sort of a thick, chunky bean soup. My wife & I have developed our own recipe, similar to this one:

We use ham instead of bacon, and dried peppers other than jalapeno (Ancho?), but the overall approach is the same, including the crockpot. Good, tasty stuff and fairly healthy.
