Yes - that's true. In North America they put all kinds of stuff in beer. That would never be allowed in Bayern.
Michael Jackson's book is very good. Explains the major "families" - (obergärig, untergärig, usw).
(Ex Freisinger - home of the world's oldest brewery.)
