I have never myself seen a dim sim restaurant. Ive even been to china town in sydney and dont recall seeing any dim sum restaurants.
However - most all chinese food stores in Australia serve dim SIM, which is like steemed/deep fried cabage balls (it is an entree). Also, a few of the Chinese restaurants, mainly in the afore mentioned Chinatown in Sydney, have "Yum Cha" which sounds like the same sort of thing as "Dim Sum" but i think its more of a pay once for all you can eat.

They have dim sum in melbourne at a few places. I haven't been yet though. Soon.

There's quite a few good yum cha (dim sum) restaurants in Sydney. Some of them double as non-yum cha restarurants as well but try the Marigold (two of them - both on Sussex street in the city) or the Sussex (again on Sussex street).
Generally no or small lines but very busy at lunch times.
There's also a very popular place in China town which I think maybe called the Shark's Fin. Expect a line here though.
All of these are pay by the dish as you would expect for yum cha. There are similar places in North Sydney and Chatswood as well.
