sexual promiscuity wasn't encouraged as far as I know - the "parfaits" which you haven't mentioned were celibate. Fish could be eaten because it was mistakenly fish reproduced asexually and so were pure. The Cathars were well respected by the local and many chose to die with them despite not sharing their faith.
