I love monterey jack cheese! Had some pepper jack on a burrito last night. But you left out one variety, Co-Jack. Half Colby half monterey jack, a very good cheese that tastes great on sandwiches and melts well on chili pie.

I am a cheese lover and appreciate this article. I am fond of "jack", in just about any variety.
