Re the question of why Monterey Jack Cheese was named minus the 'S', when the manufacturer was called David Jacks. The fact is that David JACKS was born in Crieff, Perthshire,Scotland in 1822, and his Baptismal surname was JACK, without the 'S'. His family, at the time, and his present day descendents all spell their name without the 'S'. For some unknown reason, the 'S' was added to the end of his name, once he went to the USA in 1841. 'Monterey David Jacks' as he was known, was a very controversial,large landowner,who became a millionaire in the USA and whose story is very much a rags to riches one. He at one time owned most of the Monterey Peninsula.
