Ben's Baked Eggs
Well, they're not 100% mine. I adapted the recipe slightly from Delia Smith...
Stuff you will need (per Person)
- 2 Eggs
- 1 oz - 25g - grated cheese
- 1 oz - 25g - breadcrumbs
- 1 oz - 25g - butter
- 2 terrine dishes
- A spoon!
You will also need a shallow baking tin or ovenproof dish1, and a supply of boiling water (ie a kettle).
How To Do It
- Smear a little butter round the bottom and sides of the terrine dishes, so the eggs won't stick.
- Crack one egg into each dish, taking care not to break the yolk.
- Top the egg with cheese, breadcrumbs, and the remaining butter.
- Stand the terrine dishes into the baking tin/ovenproof dish and fill the tin with boiling water to halfway up the dishes.
- Put in the middle of an oven pre-heated to 190°C (375°F or Gas Mark 5) for 20 minutes
Be Adventurous!
The toppings needn't be limited to just cheese and breadcrumbs. This also works well with capers, tuna, olives, or - if you're feeling especially posh - parma ham or smoked salmon.
