I believe that (probably after Biblical stories) Conan Doyle's Sherlock Holmes stories are far and away the most filmed subjects.

I wouldn't know, since they don't get much play in North America. It could be said that the novels of Laura Ingalls Wilder have been filmed more than anything, but most of the "Little House on the Prairie" shows were only loosely based on her work.
That said, Clemens doesn't have all that many books that have been filmed. However, those that have been filmed have appeared in countless versions.
Conneticutt Yankee in King Arthur's Court: 3 versions that I've seen firsthand, more that I haven't.
Huck Finn: countless versions.
Tom Sawyer: not quite as many as above.
The Prince and the Pauper: several films directly bear the name, but there have been tons of adaptations, as well. The story has too much romanticism built into it for Hollywood to pass up.
