One reason for stale bread recipes

There are loads of old recipes for stale bread because "old-fashioned" bread got dry and hard without rotting quickly, and still tasted good. Some people thought the bread *had* to be stale to get the best taste and, because the bread was better made, it was more expensive so you didn't want to waste it. Modern breads, made under the Chorleywood Baking Process go blue before they go dry.
Moral? Use bread from a good bakery, or bake your own.

or use German sliced toasting bread - you can use it straight from the packet.
