At this time of year (and for the past 2-3 months) I like to use Panatone (a sweet Italian bread/cake) as the bread and fresh vanilla pods to flavour the egg custard.

Anton Mosimann uses Brioche buns and lemon zest in his
yummy
and since we're in Germany we often eat it at the beginning of November after the kids have been given lots of St Martin bun things (weckemann - but it's a long story)
