Ben's Baked Eggs

Well, they're not 100% mine. I adapted the recipe slightly from Delia Smith...

Stuff you will need (per Person)

  • 2 Eggs
  • 1 oz - 25g - grated cheese
  • 1 oz - 25g - breadcrumbs
  • 1 oz - 25g - butter
  • 2 terrine dishes
  • A spoon!

You will also need a shallow baking tin or ovenproof dish1, and a supply of boiling water (ie a kettle).

How To Do It

  1. Smear a little butter round the bottom and sides of the terrine dishes, so the eggs won't stick.
  2. Crack one egg into each dish, taking care not to break the yolk.
  3. Top the egg with cheese, breadcrumbs, and the remaining butter.
  4. Stand the terrine dishes into the baking tin/ovenproof dish and fill the tin with boiling water to halfway up the dishes.
  5. Put in the middle of an oven pre-heated to 190°C (375°F or Gas Mark 5) for 20 minutes

Be Adventurous!

The toppings needn't be limited to just cheese and breadcrumbs. This also works well with capers, tuna, olives, or - if you're feeling especially posh - parma ham or smoked salmon.
