Oh there's definitely the equivalent of sign-language in ballet - gestures which are supposed to be understood the same way. It's just that ballets don't contain a lot of such dialogue and the "language" isn't rich enough for real uses.

The only deaf people I've known preferred to lipread, and didn't know sign language. Their parents felt that lipreading would help them to integrate better with others.
I learned the alphabet once, but have forgotten it now. I can also say 'pig', 'cow', 'duck' and 'chicken', thanks to a kids' TV programme that's on some mornings. I guess I'd need a voiceover for the actual poetry.

Conducting looks a lot like dancing, too. I went to see Simon Rattle conducting Bartok once, and was deeply impressed and delighted at the way he used his whole body to convey meaning to the musicians.

I like to see sign language 'spoken' too.
Very graceful to watch.
I worked with a colleague who was deaf, and of course he taught me all the rude gestures too !
He was very appreciative of peoples teeth.
