All right, here goes (it's mostly about typos):

"On Arrival at Paris Gare de Nord" should be Gare du Nord.

"Ibis Centrale" should be Central.
"Ext time" : Next.
"a quick pitstop at a local supermarket before going to the hotel that Wand’rin Star (WS) was booked into" : I think we pick up WS first and went to the supermarket with her afterwards.
"Lofty Skywalker" : Loftskywalker.

First line about Saturday : "Trig" whould be TRiG.
"pain de chocolat" : pain au chocolat.
"the tasting presided over the Guide" : presided over _by_ the guide, maybe?
"with it’s renovation" : its.
about Supper : you have two "leisurely"s there.
"Rêve de Couleurs (or review of colours)" : "rêve" means "dream". "review" would be "revue".
"Ange du Souris" : unless you're talking about the Mouse Angel (which I have never heard of myself), _"L'Ange au Sourire"_ is probably more accurate.

"the Statue of ‘De L’Ange de la Fontaine Subé’ (translation needed, but the Angel of the Fountain ???)" : the Angel of the Subé Fountain (Google said that Subé is the name of the man who paid for the fountain to be made).

"On arrival at Gare de Nord another panic" : Gare du Nord.
