PANCAKES - Yorkshire Pudding Batter

[aga book]
[2][4] 6 [8] oz flour
[1][2] 3 [4] eggs
[4][8] 12 [16] fl oz milk
[1][2] 3 [4] fl oz water
pinch salt
[lard to cook]

Break eggs into centre well of flour and add ~ 1 oz of the milk. Gradually mix in the flour, beating well. Add enough of the milk to make a thick batter and beat well. Stir in the remaining milk, leave to stand for at least 1/2 hour, then add sufficient of the water for thickness required. Heat some Lard in a frying pan to smoking and pour off. Add batter and cook, turning once.
