Lemon Jumbles
Butter 100g or 3.5oz softened
Caster Sugar 125g or 4.5oz
Grated rind of 1 lemon
Egg 1 beaten
Lemon Juice 4tbsp
Plain Flour 350g or 12oz
Baking Powder 1tsp
Milk 1tbsp
Icing sugar for dredging
Lightly grease baking trays. In a mixing bowl, cream together the butter, caster sugar and lemon rind until place and fluffy. Add the beaten egg and lemon juice a little at a time, beating well after each addition. Sieve the flour and baking powder into the creamed mixture and blend together. Add the milk, mixing to form a dough. Turn the dough out on to a lightly floured work surface and divide into about 50 equal-sized pieces. Roll each piece into a sausage shape with your hands and twist in the middle to make an S shape. Place of the prepared baking trays and bake in a preheated oven 170C 325F GM3 fore 15-20 minutes. Leave to cool completely on a wire rack. Dredge with icing sugar to serve.

Chocolate and Lemon Pinwheels
Plain Flour 350g or 12oz
Dark Chocolate 25g or 1 oz melted and cooled slightly
Grated Rind of 1 lemon
Butter 175g or 6oz softened
Caster Sugar 300g or 10.5oz
Egg 1 beaten
Grease and flour baking trays. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Gradually add the beaten egg to the creamed mixture, beating well after each addition. Sieve the flour into the creamed mixture and mix until a soft dough forms. Transfer half of the dough to another bowl and beat in the cooled melted chocolate. Stir the grated lemon rind into the other half of the plain dough. On a lightly floured surface, roll out the 2 pieces of dough to form rectangles of the same size. Lay the lemon dough on top of the chocolate dough. Roll up the dough tightly into a sausage shape, using a sheet of baking parchment to guide you. Leave the dough to chill in the refrigerator. Cut the roll into about 40 slices, place them on the baking trays and bake in a preheated oven 190C 375F GM5 for 10-12 minutes or until lightly golden. Transfer the pinwheels to a wire rack and leave to cool completely before serving.
