Harrumph. Sometimes I get really cross with the inconsiderateness of people!
J is away on business during the week so am stuck at home on my own. Every few weeks while he has been away I have invited a group of girlfriends around for dinner in lieu of being able to go on a night out and one such evening is happening on Thursday. I do the shopping on a sunday for the coming week so bought everything I needed to feed seven people yesterday.
Today, three of them cancel

On the bright side, you can cook the lot and either have an almighty pig out or keep the rest for tomorrow's dinner

Well I can freeze the meat, but there is only so much veg and salad I can eat in a week! Will make an extra large vat of extra thick soup (so can fit it all in the pan) and just water it down as I use it, will take up less freezer space that way, just wish they had told me when they knew rather than waiting until today to do it.

You'd think that if people were going to cancel when they know you're cooking and buying the stuff in etc they would give you a bit more notice!
Instead of bunging all your veggies in a pot though (although soup - awesome idea!), how about prepping some of them and popping them in the freezer? They'll keep their veggie goodness and will save you some time when planning future meals

There are other things you can cook with veggies and then freeze - or as Fords suggests, prep and then freeze.
I usually buy cheapo peppers by the bucket and freeze for later, same goes for sweet potatoes and butternut squash.
But yes, how utterly inconsiderate. Grr on your behalf.
