Poached. Electric skillet, half an onion, bit of olive oil, fry it up until translucent, add a tin of evaporated milk and a teaspoon of Old Bay, wait until it starts to boil, then drop in the catfish fillet(s) and turn the heat down to about 140ºF, and cook for about 30 minutes. The joy of this recipe is that it's impossible to overcook the fish because you're only heating it to the temperature it should be served at, and you can leave it in the skillet for three or four hours Serve with rice, or vegetables, or whatever you fancy.

Actually, I've already noshed it, and polished off some apple pie and ice cream too Sorry Shea, but I haven't had anything to eat since breakfast. Just give me, oh... 4 or 5 days notice, and I'll set some new catfish going
