Lots of regional delicacies are very nice. Some people will not eat raw fish, but I have found sushi and sashimi to be delicious. I guess I would have to try the pork and black pudding sausage before I condemned it. As long as it was organically grown pork, I could probably bring myself to eat it once to make an informed decision.
I don't particularly care for liver, but I like pate quite a lot. Jim makes a smoked country pate that is quite good, but we don't do it unless we are personally acquainted with the pig that the liver came out of, since the liver IS the organ most responsible for detoxifying and processing toxic chemicals and heavy metals and readying them for excretion. I'd just rather not eat the liver of an animal that has been around a whole lot of those things.

No, Baggers, you didn't mention that it was nice, but I promise, I will take your word for it. I'm usually up for trying new delicacies, but I have a problem eating a sausage made of fat and blood. PS, I don't do sushi either.

Blood sausage is like liver in that it smells better cooking than it tastes. It isn't dreadful, but I won't go out of my way to buy it.

There are only so many food dollars to go around, after all. Fresh ripe mangos, or blood sausage? Parmesan reggiano, or blood sausage? Prosciutto, or blood sausage? Fresh wild caught Pacific salmon, or blood sausage? And so on and so forth
