I was reading the thread and came across the candles and flames and electricity.
One of the safety features of modern commercial burners is that the flame is always monitored. If it goes out, the fuel is immediately cut off. There are two main methods of doing this. One is UV detection. The other is by flame ionisation detection.
A probe is positioned such that it will be in contact with the flame.
The probe is then given a potential of anything between 500 volts and 3000 volts. The burner is then lit and if a flame is present then a small current will be seen in the probe circuit. A current amplifier is used to boost the signal which can then be used for indication of a flame to the control system.
