This sound really interesting. How often do therse camps happen and where can I find out more about them?

The camps happen every summer, every participating chapter has to host a village every three years. You can find out more on www.cisv.org
From there you should be able to find your country´s website and learn more about CISV in your country.
As an experience for an adult - this is incredibly rewarding and fun and hard and I´d love to do it again! Although you have to like sitting on floors...
