Last night we dined on Herb Skillet chicken. These beautifully browned, boneless, skinless chicken breasts were seasoned with a delightful combination of herbs and spices, drizzled with a savory sauce and lightly sprinkled with a parsley garnish. Side dishes included steamed petite green beans, and a large green salad, punctuated with an abundance of colorful chopped vegetables.
Tonight we had Cajun Pork Chops. After the boneless pork chops were coated with a spicy mixture, they were browned in creamery butter to seal in the natural juices. Leaving an incredibly pleasant amount of heat on the palate, the pork chops were served with baked potatoes and corn on the cob.
What's for dinner tomorrow night? Guess we'll wait and see...

Actually, it was *all* very good.
I'm not sure if I'm going to do the Asian Spicy Shrimp and Snow Pea Stir fry, or the Salmon with a Pecan Butter Glaze tomorrow night.

I was kinda surprised how little the food for these meals cost, actually. Quick to cook too.

It's a sort of "fluffy" version of cornbread. Usually has some creamed corn in it... Um...
*tries to think how else to describe it*
almost a souffle type texture? Not quite that airy and light though.
Like the name implies, you don't slice it, you serve it by the spoonful, there'd be no way to slice it and have it hold together.
