Er...hello!
I seem to remember some explanation of this in 'Watership Down'. It's not actually poo, you see, it's pellets of a kind of semi-poo, half-digested stuff which needs another trip through the bunny. Rather like a cow chewing the cud, where the semi-digested cud needs to go through the stomach more than once - but a bunny, having a much shorter gastro-intestinal tract than a cow, needs to put the mulch right the way through twice.
I'd still think twice about kissing the bunny though. Or a cow, if you have one.

I'd read before how bunnies do that, something to do with stuff that isn't digested properly first time round right enough, but to actually watch her poop and then eat it...yuk!

You should take it as a compliment - you're obviously feeding her so well that she can't bear not to eat it at least twice

They can't digest vitamin K so have to eat it twice.
They eat it normally as soon as it is passed so you don't often see them do it.
The black poo is poo and the other coloured stuff is edible - to that is. Unless you are really hungry!

For some reason she was pooing green all over the place today. I was off sick so was on the couch with the duvet and she jumps up for attention (she's such a sook). She then proceeds to poop everywhere, and eat it, but only on my duvet. Really strange!

One each, although she got hers and tried to eat mine, the little sod. She's still pooping on my duvet too, my nice CLEAN duvet

I knew there was a reason I thoughts rabbits were best either hopping in fields or roasting in the oven.

Hmmm, you might have a good point there - but she's so cute though! I couldn't let her go or eat her! Argh, dilemma!
