Recently, I've been cooking a lot with cauliflower. Mainly, because its quite probably the tastiest food ever; so long as its cooked properly.
Thanks to a childhood, that put me off a lot of food, I never knew I liked cauliflower, as the boiled to death vegertables of my youth did nothing, for texture or flavour. Or, indeed, I guess, nutrients.
Anyhow, cauliflower, baked.
is then, a very good rice substitute, for risotto, with the added advantage its lower calory, tastier, has way more fibre and way more protein too.
Plus, its really tasty.
Also taken to using pearl barley; imdeed baked cauliflower, pearl barley and chickpea risotto, is - as we're using the cauliflower, we really reduce down the amount of the pearl barley; about 25 G per person, dried weight, is plenty enough

No cauliflower tonight. broccoli with the last of the big pot of Hungarian lamb with mushrooms I made a few days back instead - we even got a comment in the shop buying the mushrooms for that dish.... - it was an aweful lot of mushroom
In otter news its warm out, and so I bought a new smart black lightweight jacket; looks brand new, not worn, cost about the same as a pint of beer, in the charity shop - I've my smart red jacket, and also a green/grey, one, but needed something to match with other dresses I might be wearing

and feeling even worse with this sore throat... If I die or something I may have to go see the DR....

Are you on a LCHF diet? Cauliflower is really great for that You can even cook cake with cauliflower.
And I sympathize: I hated cauliflower the way my mum cooked it. Now I quite like it.

I like cauliflower, (my mum was a good cook). However, it doesn't like me. At all. I also like chick peas, but the feeling isn't mutual there, either. So, although your supper sounds delicious, I'd have to give it a miss.
Cauliflower steaks are all the rage, too, or so I have heard.

Yeah... It's probably more accurate to call it "riced" cauliflower than cauliflower rice.
That reminds me of that silly example of ultra-patriotism in the States when many folks called for changing the name of 'French Fries' to 'Freedom Fries'. These eejits weren't aware that the term referred to how the potatoes were cut in a way referred to as "Frenched" rather than the spuds having some allegiance to the nation of France.

I'm not on any diet, as such, but stick to higher protein and lower carbohydrate, due to being on steroids, as the glucocorticoid steroids, as the name stuggest, seriously messes up glucose, AKA, basically all carbohydrate metabolism; results in hugely increased type 2 diabetes risk, plus out of this world sky high colesterole and saturated fat numbers, if carbohydrate is too high... - having said which I only moderately monitor/worry about overall carb VS protein balance, its just a case of trying to balance it the right way, plus with keeping calories per day below 1600 KCal, to stop the steroid weight gain
Fav thing with cauliflower, is still cutting/breaking into tiny florrettes, coating in sessamae oil, and cinnamon powder plus black pepper, and baking, until caramalised/well done, then eating just with plain low fat/zero fat yogart - you can eat a massive plate full of the stuff and still not eat barely any calories, just tons of flavour
I don't 'rice it' as such when using in risottos; asides anything after baking plain with sunflower oil, it then tends to nicely fall to bits in the pan, with the other ingredients, into the tinniest florrettes, with a few larger florrettes, providing texture... - the chickpeas are good baked too or made into hummus of course - though humus does mean you have to have home made pita bread with it and piri piri chicken strips or home made kebabs on skewers
