People that fancy other people often touch themselves where they would like to touch the other person (stroking legs etc,), keeping their bodies pointing towards the object of desire.
Eye contact is held slightly longer than usual, sideways glances, smiling, wonmen playing with their hair, wiping imaginary dust off the other person's clothes, leaning forwards towards the other, standing or sitting closer together than normal.
I could go on all day.
But I won't, I'll pause for now, and be back later.

An interesting thing to notice is that a person's pupils will dilate more than normal when they are attracted to you. I guess the reasoning is that the person's eye is trying to take in as much information as possible about the object of their adoration. Note that this also works for anything that one likes, including cars and the like.

Including poker hands. Professional poker players use this to see if their opponents have gotten favorable hands, since it's harder to control the movement of pupils than one's facial expression.

One thing I've notice and do is when I'm attracted to someone i bite on my lip. I also do this when I'm nervous.

Here's another way to test how well you're getting along with someone. If you're in tune with the person you're speaking to you'll often find you unconciously mirror each other's body postures. So if I rest my hand on my chin, the other person will follow me, if he leans forwards I'll find myself making the same move and so on.
I was actually told this as a technique for making interview candidates feel at ease. Amazingly it does work although clearly if you're too obvious about it, it's spooky and has the opposite effect. smiley - winkeye

What I find disturbing is when people I don't fancy mirror me, then I change position pretty quickly!

The reason people's pupils dilate is adreneline: this is released when you are excited or afraid. So, whether you fancy someone, think you're about to win a game, or are telling porky pies then they will dilate.
A psychologist called Neisser found that when shown two pictures of the same woman, with the pupils artificially dilated in one picture, people rated the doctored version of the woman as more attractive - without being able to say why. So, if you're heart jumps into your mouth when you spot someone you fancy, smile in the knowledge that the adreneline making you weak at the knees is also helping you look your best! smiley - smiley
