All I can think is I would like the paneer recipe, please?
I've had "home made" in a restaurant, the chef's wife made it, but only once.
It was delish.

4 pints (2.25l) full-cream milk
4-6 tablespoons vinegar or lemon juice

1. Bring the milk to the boil, slowly (a large saucepan is best), add the vinegar and stir until it separates.

2. Strain it into a large kitchen sieve lined with a teatowel (or cheesecloth/muslin if you have it) and placed over a saucepan or bowl to catch the whey (you can put the strainer in a colander placed in the sink if you don't want to keep it).

3. Fold the teatowel over the curds and press out some of the liquid (they'll be hot, remember.

4. At this point the recipe says to place the curds (still in the teatowel) on a drainer, press them out into a circle about ½" thick and put a weight on top of them, but I left them in the sieve and put a weight on top of it (28oz tin of tomatoes) so that the whey could drip into the bowl I'd already collected most of it in.

5. If you want crumbly paneer take the weight off after 30-40 minutes. Crumble the paneer and use it as directed in recipes. If you want firm paneer leave the weight on for around 1½ hours and cut it into cubes.

I added a little salt, although it's not in the recipe. The BBC food website has a few recipes for it too.

I wasn't sure what I was going to have for breakfast this morning until I remembered the whey that's been in the fridge for a few days after that batch of paneer I made earlier in the week.

And I *still* have some milk powder left smiley - flustered And some whey, so pancakes again tomorrow morning smiley - ok
