...deal with chocolate containing 99.5% cocoa solids

One of Mrs Gosho's friends just came back from France with some that has the highest cocoa solids content I've ever seen - 95.5%
That's gotta be for cooking, right?

I'm with Kea here, taste the bloody stuff. If it tastes like black coffee, cook with it. If it doesn't, save it as a treat to nibble.

I would eat it, I prefer the higher cocoa content as it means there is less fat and stuff in it. The highest I have eaten was 99%.
If you don't like plain choc, then grate it into ice-cream or something like that.

I'm not sure "deal" is the right word in connection with chocolate. It makes it sound like the chocolate is some sort of problem - engulfing whole villages in its path or something. A pack of chocolate cards probably wouldn't last too long either.
Anyhow, my friends mostly use the seriously high content stuff for making things like truffles. Though there was also the time they made rather a lot and ended up making truffle ice-cream too...
It's been a while since the car-trips to conferences came back laden with boots full of 5kg bars/blocks of chocolate.

Thanks for all your suggestions. I'm out of town until Sunday but Mrs Gosho is still at home... there better be some left when I get back

You can get decent chocolate here, but I've never in my life seen anything like this, even in the UK
But yeah, most of the chocolate here is mass produced, sugar-filled stuff along the lines of C*db*rys or H*rsh*ys
Intern - yeah

I find that quite a lot of the Fair Trade stuff is fairly potent, cocoa-wise. Also, there's a chocolate-making outfit somewhere in the UK who do fab 'tasting' boxes (I got one as a present, so I know!). Can't recall the name but I could find out for you - they do mail order

My favourite chocolate is Green and Black's Maya Gold Anyone who doesn't like that stuff needs their taste buds examining But as far as I know I can only get it on mail order in Texas

Sorry - that was cut short - a kitten walked across the keyboard and changed my letters to numbers for a while...
I was talking about Green & Blacks, that's what I meant! About the teasing
