Horslips may have played some Carolan (possibly, I can't quite recall) but not on harpsichord, I believe. The primary player of Carolan on harpsichord in the sixties and seventies was Seán Ó Riada. His group was Ceoltóirí Cualann, which later became The Chieftains.
There is a high-pitched harpsichord, called the octavina, really a small spinet with the bass octave missing. How authentic it is I don't know.
Celeste: its greatest hit is surely the Dance of the Sugar Plum Fairy.
