What happens to vegetable oil (rapeseed, soya, sunflower etc) if you use it several times to, say, fry an egg. How does it break down with repeated use and is it likely to be bad for one's health?

I think they gradually become saturated as well as absorbing saturates from what you cook.
So yes, not a good idea to keep reusing them.

Well that may be a factor - it was my opinion not backed up by any evidence and I've now had a read around.

This looked like the best answer around to me. There is lots of what I suspect is scaremongering crap about HNE's in reused oil but I suspect the real truth is as posted in the link above.
