Just started working in Soho and have been happily introduced to the cornucopia of far flung combinations that comprise the sandwich industry in London's 'Trendy' and 'Creative' area.
Here's an unusual idea -
Sliced, Roasted Aubergine with Guacamole on Toasted Ciabatta.
But the best thing about lunch is the extras, following the Spanish tradition of tapas why not try -
Sun dried tomatoes, sardines (in red wine vinegar, tabasco + black pepper), chorizo, parma ham, potato wedges (dressed in herbs),
And don't forget salads (all you need is tupperware)
Pasta salads (bought or home made), Roasted Vegetable Salad (cooked in Olive oil, Rosemary + Garlic, served cold), Mixed Leaf topped with Parmesan and Lemon vinegarette (Try Rocket, Watercress and Spinach).
And don't forget you can pick up nice fresh fruit salad variations from just about any supermarket these days.
