I was glad to see this entry, but where are the ideas, the food and the spirit of cooking?? Must I search the entire Guide to find what could be collected under one Book?

My quest for a complete cooking book must start somewhere... so I want to share with you this simple but delicous recipe of a spinach soup. For the winter ahead it is really perfect.

You need spinach (whole or chopped, fresh or frozen), garlic, butter/margarine, veg or meat stock (from cubes/powder of course) and, if you happen to have, natural yoghurt.

Spinach must not cook for long as it will go toxic! But that is just fine with this recipe because we want it to be quick. So, put water to the boil together with the stock. Add the spinach, bring to the boil again and cook for 3 minutes. Take off the heat, add fat, salt and pepper and garlic, if you are not using yoghurt. Mix yoghurt with crushed/chopped garlic and serve in a small bowl next to the soup or directly in the soup.
