My first effort. How do I "direct it" to the recipes section?

Well you're in the right place to direct this to the recipes section if and when it gets picked by a scout and edited then once it becomes part of the edited guide it will be put in the recipes section by those nice people at BBCi. Anyway for this to be reccomended it does need to be in third person, eg you need to remove the "i" from the first paragraph. Also if you cannot be sure this is authentic then you might want to change the name to "Thai Style" chicken curry.


If you want to make it a little longer then you could say how you would adapt it for a vegatrain version, or what meat would taste good for those that don't like chicken etc.

Sounds good to me. It's always a nice relief when people give recipes for which you can get the ingredients in the course of your normal shopping instead of having to trek out to the hugest hypermarket in the area smiley - biggrin

Small question though. When you say fish sauce, what do you mean exactly? Like those bottles of oriental type oyster (or whatever) sauce you get next to the Worcester sauce and suchlike?

Does the fish sauce just subtly alter the taste, or does it actually make it taste a bit of fish? (I only ask 'cos I don't really like the taste of fish - yet I'm happy with Worcester sauce, for example, and the main ingredient of that is anchovies).

Re: fish sauce

Fish sauce is not a ready made sauce but rather a "worcestershire sauce" type flavouring and lasts in the store cupboard for ages. The sauce I have is clear brown and comes in a similar bottle to Soy sauce. It doesn't have a fishy taste as such: it has an intense salty pungent flavour - it gives the curry a salty "kick" and stands up well to the other strong flavours in the mix. Awful on its own, fantastic as an ingredient. Hope this helps!
