I didn't realize that the name itself is now gone. We now live in a world in which African-American celebrities can be nominated for Oscars for portraying Queens (Angle Bassett, for instance). Queen Latifah has hair products. There are also many food and beverage companies owned and run by African American women.

Pancake and waffle mixes are sold by SoCu Kitchen, founded by Erica Barrett.

So, we can go forward. We can have pancake mixes, made by companies run by black women

In the Netherlands, the name of the chocolate covered marshmallow was sanitised around 2006 (after being in production for 86 years) although apparently the racism was not the main driving factor. They just wanted to put other words in front of "zoen" (kiss) for commercial reasons.

What new word(s) did they use?

They went from negerzoen to Buys zoen (their own brand name) and proposed zomer zoen (summer kiss) Valentijns zoen (valentine's kiss)

I must admit it is still hard to get the old name out of my head, since they only cut off a bit instead of thinking up an entirely new name.
In Belgium they could go for the double. There they called it negerinnentet, so basically racist and #Metoo combined.

Around here, I never came across Aunt Jemina. Maybe because I always make my pancake batter from scratch. It isn't that hard. just 500g flour, 1 litre of milk, three eggs, pinch of salt, pinch of cinnamon and I usually mix in some sunflower oil in the batter so that I don't have to mess around with that while I am baking.

I'm guessing your pancakes are more like crepes and less like ours?

That's correct. Usually half have slices of bacon in them.

Aha! Ours lends itself to a mix because people prefer hotcakes that are thick and fluffy.
