Hoe cake, also called johnny cake, is a cornmeal griddle cake originally cooked on a hoe blade.

Our ancestors didn't have ovens, so they mostly did open hearth recipes. As this lady says, 'This recipe is old as dirt.'

I've made corn bread. There's stoneground corn flour in my pantry. It's about eight months old, so I hope it's still good. hopefully the mice haven't gotten into it.
