I hate raw onions. Why oh why oh why do they automatically get added to sandwiches? (And just cos they're fashionable red onions doesn't make them any better, get them to heck off my food!)
Haven't had this in a long while, but when my children were younger we used to make Graveyards: toasted bread spread with peanut butter and sandwiched together with crispy bacon.
I eat a bit more healthily these days, but I do sometimes succumb to the lure of a ham and cheese toastie on white bread.
My favourite "cheap, tasty yet nutritious and unlikely to go soggy" filling is a hard boiled egg, finely chopped together with a tomato about the same size, plenty of black pepper and a little salt. The juice of the tomato negates the need for any mayo and the whole mixture is just the right consistency for spreading.
