Most Chicago thin crust is standard fair you can get anywhere. But what makes Chicago Pizza different is their Thick Pies. Really not a pizza in the tradition since. Usualy their about an 1 1/2 thick depending on your number of ingredients but the sauce is always on top.
Putting the sauce on top is key. this keeps you crust from getting soggy and because the crust is protected they make it crispier more cracker-ish. Instead of a mass of chewy dough which is the quickest way for me NOT to eat it.
Gino's East downtown on Superior St is my fav. It's not for casual pizza ordering. There is usually an hour wait on the weekends, but the pizza is top notch and they let you write on the walls. It's also a small chain but it's is one of the original Chicago Pizza places.
