A Conversation for Basic Pie Dough

Dear Friar, This is your Mom. I found you! You can't get away from me. Anyway, about your pie dough. . . Where did you get that recipe? It's not mine. It sounds okay but you forgot an important point. After you place the pie dough in the pan you need to coat it with egg whites. This will prevent the dough from getting soggy. The dough will seal and absorb less.

P.S. peaches are going to be in season soon--watch out, here they come.

OK, thanks mom, good point abut the egg wash.
The pie filling is not too liquidy though, more of a really solid jelly, so it would work without the wash, but the wash IS a really good habit to get into.

ps. Peaches are fine. . .I make a mean cobbler, and we actually eat those without baking them first too!
That really IS my mom, in RL BTW
for my mom, in case she checks this conversation, a translation of the above line:
(out of character- you're my mom, in Real Life, By The Way - back in character)

Hello bobchi - and welcome to h2g2
I trust that you are justly proud of your son.
If you ever feel the urge to contribute a recipe, then please let either him or I know. We are always happy to feature new cooks (and it sounds as if you taught him almost everything he knows anyway!)

OK, well, now I want to see if my Mom returns the the site, or if she needs prompting.
She's very busy shopping for her first grandchild (due in Oct, and my first baby obviously), fixing a house (mine), and writing her PhD dissertation while working full time!
I'll get her to write her recipe for Ravioli, truly outstanding.
