I've heard that not only is the black carbon not something to be worried about, but that the blacker your wok is, the better

It's true that the blacker the wok is, the better for it, as this reinforces the seasoning, and thus makes the non-stick layer far more durable - the more you use it, the blacker it gets, and therefore, the better it gets

just a quick question......why doesnt the kitchen paper catch fire?
oil is flamable you said and paper is very flamable....

The trick is that the oil is cold on the paper, and that you wipe it around *very* quickly. Pouring it into the wok gives it a chance to warm up and set itself on fire (as I found out ).
As long as you don't hold the towel in the same place for ages, it won't catch fire

Hey all!
I'm the subed for this entry. Ive been through it and changed a few (minor) things around. One point of debate though: I've put the Step One, Step Two, etc. headed paragraphs into an ordered list, IMO it looks better that way. Any feedback?
Apart from that, I've not much to say. I'll run it through my spellchecker when I get home - there's always something that I miss - and then I'll return it to the editors.
Very good entry, BTW, the sort of thing I like reading in the guide - practical advice that you wouldn't find in a 'treeware' encyclopedia.
