Rice salad
1-2 servings.
Ingredients
- 1/2 a cup of Persian white rice
- 10-12 cherry tomatoes
- Mint leaves and/or Parsley and/or Coriander according to personal taste
- One spring onion
- Juice from half a medium-sized lemon (or more)
- 1 tbspn. Olive oil
- Salt and spices
- Soup powder for the rice
Method
- Rinse well and then cook the rice until it's ready, with some soup powder, a bit of oil and a pinch of salt.
- While the rice is cooking, wash and cut the cherry tomatoes, slice the onion (either just the white bit or all of it) thinly, chop mint leaves and mix them all in a bowl. Spice up the salad with salt, 4 seasons' pepper (wonderful, but optional), the lemon juice, olive oil and whatever other spices you like. Mix well.
- Drain the water and place the cooked rice in the salad, and mix well, so it soaks up the lemon and tomato juice, and all the spices.
Serve hot and enjoy.
