The Green Man needs to be treated with care - The fact is that his image has only ever been found within churches, there is no historical record of such a deity outside of a Christian context.
But what about the pub names? I hear people shout - Well sorry to disappoint you but the Green Man is those cases was a herbalist who made alcoholic liqueurs from his herbs as well as medicines

Well I hesitate to argue with anyone who claims to be a pagan historian. And it may well be that the Romans were the inspiration rather than the pagans. Both the story of the Green Knight and Robin Hood have been so integrated with Christian influences it is hard to separate the origins from later embellishments.
