As it's easier to have an even number of letters, I suggest that we go with the plural form for the acrostic.

Pina Colada, and Sex on the Beach
Are garnished with teeny umbrellas
Raspberry daiquiris, Harvey Wallbangers
Are mixed by some skilled cocktail fellas
Sip in the sunshine, rest by the pool
Or take a short stroll by and by
Look out for that pointy stick served in your drink
So don't let it poke out your eye!

- PARASOLS -
Perhaps I'm mad, perhaps I'm a bum,
A mad dog who goes out in the midday sun,
Reclining on beaches with plenty of beer,
And sod all to worry 'bout, let alone fear.
Some say I'll burn - some say I will fry,
Others are certain that soon I will die.
Let all of those who auger disaster and doom,
Sit quiet in the shade, while I sunbathe at noon.
