This is good stuff, Jimi. Perhaps you should mention the film 'Witness', which gives a glimpse into the Amish lifestyle.
Also 'throw the horse over the fence some hay' is not a serious syntactic error (compare 'throw it some hay'), but it is unusual. The Pennsylvania Dutch probably also put adverbs inbetween subject and object, which is also counter-intuitive, and, er...
'the Germans' ascetic religious principles matched *closely* their own beliefs.'
... is an example of that. I don't mean to be picky.
