Thanks for the entry. I've often heard of Parkin, but had no idea (until now) just what it was. Also, the history is really interesting.
Have you made these cakes?? Is there some type of trick to making them at all (like there seems to be for Yorkshire Pudding, which I'm convinced only those from the north of England can make properly).

Tip: if your yorkshire puds are looking a little flat it means you opened the oven door while they were cooking
If they are burnt, you had the oven too hot
if they are burnt and flat not only did you have the oven too hot you opened the door too
No theres no secret to it anyone can make it. You should have a bash

Well, I have and they still turn out flat and doughy. Though, as you say, I probably opened the oven door ...
However, a friend of mine who originally hails from Wales/Chester, makes the best Yorkshire Pudding EVER. I think it's in the blood ... though I make a darned fine Pavlova ... and a pretty dammed good Damper (with beer is the best). It's in the blood.
I'm going to send those recipes to a mate of mine who's into Medieval type cooking, and currently recovering from surgery ... it'll give her something to look forward to.
